  1. I recently just moved to West Texas into an old apartment w/ my hs/college buddy(who also works with me)to work in the oil fields. After a few weeks I finally have a day off. He left his 'field' grill as he went home during off daysl(field grill is a tiny tailgate grill that we take out onto job sites & cook stuff up while we wait.). Anyhow, I decided I was going to experiment with chicken fish & throw a little spice into it. So at the store I randomly just throw a bunch of items into the cart & figure I'd work out the plan when I got back. So just figured I'd make a relative of the "Chicken Diablo'.


    First: We start out with regular chicken breasts & tilapia as the fish. I rubbed 'Uncle Tonys' seasoning all over both sides of both the chicken & the fish.





    Second: Put the chicken on the grill keeping it closed so it won't lose too much flavor & for it to cook faster. Put olive oil in a pan & put on medium heat to prep for the tilapia.





    Third: I prep the cilantro, fresh jalapeno peppers, pre-cut mushrooms, red peper, onion & BACON! By slicing all of the veggies & pre cooking(halfway-3/4 done) the bacon & tilapia go on at the same time.







    Fourth: After all items are prepped & cut throw them into a 'skillet' & mix it around. After a couple minutes toss any cheese of your liking on top & continue to mix another couple minutes until ready. Note: Added canned diced tomatoes in.







    Fifth: I sliced the top off of the red pepper & cleaned out the entire inside with a spoon(like a pumpkin.).



    Sixth: After having the chicken on the grill 7 minutes each side & you know it's done to your liking take it off of the grill.




    Final Product:





    I'm having trouble with my internet. It sucks so I probably missed some stages but time to drink the rest of this 12 pack & some frozen bagged coladas lol.

  6. Looks pretty good to me. Couple questions... the mixture is just put into the red pepper and the red looks like it was popped on the grill for a little before the mixture was put in, is that right? And the green stuff on the plate, is that guac? I may be making that stuffed pepper soon that looks goooood.

    Yea the mix was put into the pepper& yea the mixture & pepper were going at the same time but the pepper came off a few minutes before. Usually I use green peppers & I keep them on longer. & yes, that is Guac. How I eat it though is cut the pepper & eat all of it with the chicken & fish. It's really good. Spicy, but good. I ate the tilapia first because it's damn good & I couldn't wait.

    tonys is good and all but try this if you like spice. Its basically all I ever use.


    Also have one called good shit and special shit.

  15. i vow to not make another post about food without pics but today i made beef kabobs over coconut curry rice, and an artichoke black bean salad with a pear vinaigrette

    took some super legit maple syrup and mixed it with some soy, some ginger, some sesame oil some sake, lil siracha, marinated shitakes, portabellas, and button shrooms in that, red yellow and green peppers, some zuccini, cherry tomatoes, huge chunks of red onion, made some kabobs, grilled them and finished in oven, i made a pile of the rice and laid the kabobs across that, and filled the rest of the plate with the salad, drizzeled leftover marinate around the plate... veggies were right on the cusp on being burnt and the meat was cubes of tenderloin that was perfectly done, that shit was mean as fuck, like i said, ranting like this is just masturbation without pics, but i'm fitna get my iphone involved soon and start making you niggas moist

    the sammich i ran today was grilled chicken stuffed with garlic goat cheese, poached pears (champagne wine thyme, etc) tossed on top, some arugula lightly sauteed on either side, and i made a creole mustard using course grain, the poached pear juice, and cayenne

    i was having a talk with my boy today who just got into law school and he was trying to talk me into just taking the lsat to see how i'd do and i dont even want to, i fucking love cooking

    i'm also half buzzed and i don't give 4/5 of a fuck about what im saying right now, just proud of the food i tossed around tonight
