  1. My wife and 5 year old daughter just got diagnosed with Celiac Disease. We are in scramble mode trying to figure out diets and such. We have a few websites that we are researching now but any advice would be appreciated.

    We obviously have scheduled Dr Appts for tomorrow and they have us scheduled to see a dietician.

    Thank you in advance for any help.

  3. My buddy John (6 Shades) has celiac disease.. Basically he cant eat anything that has gluten in it.. No breads unless his wife makes him. For your wife she cant drink any beer except Red Bridge I think. She can drink Captain Morgan.

    As far as diets go his wife makes him alot of gluten free stuff.. Its basically like being on the Atkins Diet in essence with a little thing added.

    It can be life threating if you dont take care of it.. You remember Joe C from the Kid Rock videos.. He died of Celiac Disease.

  6. Coeliac disease is caused by a reaction to gliadin, a gluten protein found in wheat (and similar proteins of the tribe Triticeae which includes other cultivars such as barley and rye). Upon exposure to gliadin, the enzyme tissue transglutaminase modifies the protein, and the immune system cross-reacts with the bowel tissue, causing an inflammatory reaction. That leads to flattening of the lining of the small intestine, which interferes with the absorption of nutrients. The only effective treatment is a lifelong gluten-free diet.
