  1. just looking some some recipes and tips. just seeing what OT's got.
  2. Buy a kosher or hallal chicken as they tend to be the juiciest. Slice your chorizo very thin and in to pieces around a nickle size. Then chop some garlic and ginger and smash together in to a paste with olive oil,sea salt, pepper tyme, oregano and tarragon. Carefully break the skin in multiple spots and spoon in the garlic in to the slots and spread around the chicken under the skin. Then take your sausage and do the same...save a few pieces for the cavity and also add a half an orange and a top cut off garlic clove and half a lemon. Roast at 350 for 18 mins per pound remove and let stand 20 mins minimum before carving.
  3. i like to use chorizo in pasta.. take the chorizo out of the casing and brown it along with some diced pancetta or bacon.. drain that.. add some milk or heavy cream, 2 tbsps of butter, cup of shredded parmsean, S&P, handful of capers on medium heat to thicken into a thick sauce and serve on top of rigatoni.
  4.
