This sounds soooo good. I was going to make chili but I think I'm going to make this instead!

leave the crockpot on high for an hour then lower for 6-7hrs
For a lot of people you can use 2-3 roasts totaling 8-12 pounds. Adjust the rest of the ingredients as need be. -

i'm surprised by how many people make chili that really doesn't taste that good. one of my leeeeeasssst favorites are ones that people try and have taste like mole.

yeah i/we can post it later tonight. i have to wait until thereraise gets home from work since he actually needs to give me his shopping list so i can get the ingredients tomorrow. but just a head's..... we do put corn in ours. some people don't like corn in chili but for me it needs to be there.

I'm having some people over to watch the game and I would like to hear some ideas on good foods/ snacks to make. I'll be making guacamole and buffalo tuna dip, so I should have the dips covered. I need some main course kind of stuff. Let's hear some ideas and recipes?

Oh I guess I'll start it off with the buffalo tuna dip recipe: it's really easy and delicious.
2 small cans tuna (you can also use shredded chicken)
2 8 oz packages cream cheese
1 cup shredded cheddar cheese
1 cup ranch dressing
1/2 cup hot sauce (more or less to taste, obv)
Heat that shit up in the oven or stove, mix it together. Easy game.

1 pound ground hot sausage
1 large can crushed tomatoes
1 tiny can of tomato paste
1 chopped onion
3 cups chicken broth
1 chopped bell pepper (any color)
3 chopped jalapeno peppers
1 can of corn
spices to taste - i dont know measurements as i dump them in until it's perfect - about 3 tablespoons chili powder, 1/2 tbsp garlic powder (i'm always too lazy to mince garlic), 1/2 tbsp onion powder, dash of paprika, maybe a tiny bit of sugar.
Cook the meat in a big pot. Once it is cooked, add everything. Bring to a boil, then reduce the heat to a medium-low and let the chili cook for at least an hour. -

i got one this year from my grandma at x-mas time, and i kinda chuckled like no way im using this thing. but it makes everything so much faster and easier to clean up. -
Uh, no. The greatness of jambalaya resides in the rice's ability to absorb and retain the multitude of flavors in the overall recipe. Pasta doesn't remotely do it justice.
Pastalaya is a bastardized cajun dish that you'd find on some terrible corporate menu like Applebees or Cheesecake Factory.

Here's my chili recipe, for anybody who wants to try it. I've experimented with it a few times this season and always had good responses, so I finally wrote it up. The base chili recipe is essentially res' sister's (The Pioneer Woman) and then I added a few of my own touches with the spices and extra ingredients.

So yeah, this is what I'll be making, among other things. I'm having 15-20 people over, so I may make a few other things from this thread as I'm definitely going to need more than just the chili.
• 2 pounds Ground Beef
• 3 cloves minced Garlic
• 1 can (12 To 14 Ounce) plain Tomato Sauce
• 1 can (10 Ounce) (diced Tomatoes and Chilies or Red Peppers)
• 1/2 teaspoon Salt
• 1 teaspoon Ground Oregano
• 1 Tablespoon Ground Cumin
• 3 Tablespoons Chili Powder (more to taste)
• 1 Tablespoon Cayenne Pepper (more to taste...I use at least 3)
• 1 Tablespoon Sugar (more to taste)
• 1 can (14-ounce) Kidney Beans, Drained And Rinsed
• 1 can (14-ounce) Mixed Beans, Drained And Rinsed
• 1/4 cup Corn Meal
• 1/2 cup Warm Water
• Grated Sharp Cheddar Cheese
• Diced Red Onion
• ½ Dark or Stout Beer
• 3 squares Dark Chocolate
• Tabasco to taste
• Lee Hum Kee Sriracha Chili Sauce to taste (I used a lot)
Brown ground beef with the garlic in a pot over medium-high heat. Add tomato sauce, diced tomatoes, salt, oregano, cumin, chili powder, cayenne pepper and sugar. Cover and reduce heat to low heat. Simmer for 30 minutes.
Add drained and rinsed beans, red onions, and beer. Stir to combine, then cover and simmer for another 30 minutes.
Mix in the hot sauces during this stage. I do a lot of tasting while cooking to try to get the chili to start off sweet and finish spicy, so I don’t usually measure how much hot sauce I use.
Note: If you like sweeter chili, use more sugar and/or chocolate and less cayenne and hot sauce. If you like hotter chili, stick with the above ratios and maybe even add more spice.
Mix corn meal with water then add to the chili. Also add the chocolate. Stir to combine and simmer for a final 30-40 minutes, checking the consistency every 5-10 minutes. Add more hot water if it’s too thick for your liking or more corn meal if it’s too watery.
Serve with grated cheddar, fresh bread, Fritos or nachos. -
The chocolate gives it a real nice flavour and an amazing aroma, but it should be dark 70% cocoa chocolate (not a Jersey Milk bar). I've never made anything but beef chili and never used chicken broth. The three cups of broth in your recipe seems like a lot to me; is your chili relatively thin? I don't like mine watery, it has to be nice and thick, imo.

Yeah I'm sure it's good, I love cooking and trying different things. It's pretty thick. I don't use any tomato sauce like you do. Three cups of broth is not a lot for 3 pounds of meat. Also I just don't like beans, personally, which is why I use corn instead of beans. People seem to really like it.
Btw, I hate dealing with garlic too, so I buy these frozen spice cube thingies which are amazing. You just pop the cubes out of the package and into whatever you're cooking. It's a much better flavour than using the powder.
