Today's episode of OT cooking is warm salad. I used cold smoked salmon and shrimps for mine but you can replace them with grilled chicken, for example.

What you need for 4-5 person.

Shrimps 500gr - no way you get them fresh in Finland so gotta go with frozen here.
Cold Smoked Salmon 300gr
Salad - Not sure how they sell salad there but here they're in these grown& sold in these little boxes. Two of those
Cherry tomatoes 100-150gr.
Cheese - I believe all kinds of cheeses work. Use what you like / have.
Toast bread about 8 slices.
Two nails of garlic.
Little olive oil.
Pepper
Salt.

Or if you go with grilled chicken-version, one grilled chicken and two green apples.

Timing is the most difficult thing for cook. If I F up while cooking, it's cos my timing is wrong. With this dish, shrimps are the difficult one because they turn kinda chunky and bubblegum-like if you cook them too long.

Wash salad and cherry tomatoes (and apples if you decide to use them).
<span>Defrost</span> shrimps. (lol, ty jeff)
Chop garlic, put little olive oil on the pan and throw garlic in there. Heat up.
While waiting for pan to heat, chop cheese into little bits. Also chop apple.
Put bread into oven so all of them are ready at the same time. (Unless you have some super toaster for 8 slices, then you don't have to toast them yet.)
Cut salmon into reasonable sized pieces.
Now the pan should be hot, shake out most water of shrimps and throw them on pan. Some salt and pepper. Mix a bit. Depending on the size of the shrimps 1-3 minutes is usually enough.
Put salad, tomatoes, cheese (+ apple) into the serving bowl, throw salmon on top. Mix. Take shrimps from the pan, pour them in. Mix again.
Bread can be chopped and thrown in the same bowl or just put on different bowl and let people take themselves. I just put them in immed.

Grilled chicken version take meat off the bones after washing veggies. Toast bread. Put them in the same bowl. If you like garlic you can still heat it in the pan with oil, it will give a nice sauce :)

With warm salads you need to eat as soon as possible after it's ready. If you don't salad will become sloppy and if you have bread in the same bowl it'll suck all the water from salad etc into itself.

Easiest version for sauce is to mix some olive oil, pepper, salt and citron juice.

Salads are great way to eat well but without much calories and bad stuff. Sorry for not having pic but I was hungry :)

Drink to go with shrimp salad would be probably some riesling from Germany or France. For chicken salad it would definately be some nice Californian red wine.
