So when I shut my shower off, the pipes make a loud banging noise. It basically sounds like they are going to explode. Pretty sure at one point my fridge moved (ice maker hooked up to water line?). It seems to only happen with this shower. I never hear this noise with the other shower, sink, dishwasher, etc.
Is it simply just air in the pipes, water hammer, or something else?

Are you shutting off the shower directly? If so, try switching the diverter back to the tap, and then shut off the water. If no banging noise, then just do it that way forever . . . problem solved.

Sounds like the pipe may not be affixed to the 2"X4" stud that the shower head is attached to. When you turn the water off it jumps a little because there is motion occurring inside .
If left un addressed for long it wont get better. see if you can move it in the wall by grabbing the shower head and wiggling it a bit. If you can more than say 1/2 inch, better plan on removing a few ceramic tiles to get behind them to re attach the pipe to the stud. If you have a copper pipe, use a strap made of copper also so you don't invite corrosion. -
duct tape is the answer for all plumbing questions.

If it's water hammer, it may reduce if you can go to the stop tap and turn down the water pressure

You need to get yourself a water hammer arrestor.
Basically its a t piece tube with the shaft of the T closed that has a spring loaded piston in it.
When you shut off the water the spring compresses ans absorbs the shock/shudder.
Not sure how you could fit it to a shower though. Usually you find them fitted under sinks. You may be able to get one that goes on the water meter.
