do you guys have any favorite recipes? looking for something simple (easy marinade, etc.)

Why do you need a marinade for an aquatic creature?

I usually fill the insides of a whole salmon with lemons, fresh parsley, garlic, butter, and spices then wrap it in foil and throw it on the grill.

Ingredients:- 6 ea 5-6 oz Salmon fillets
- 1 ½ Tbsp Seafood Seasoning
- Non-stick Cooking Spray, fat-free
- 1 sleeve Ritz Crackers, crushed
- 6 oz. Andouille Sausage, diced small
- 1 cup (8 oz) Lump Crab Meat
- ¼ cup Butter, melted
- 1 ½ tsp Parsley, dried
- 1 ea. Green Onion, chopped
- 4 oz. Monterey Jack Cheese, shredded
- 10 oz. container prepared Alfredo Sauce
- ½ tsp Seafood Seasoning
- 4 oz. Monterey Jack Cheese, shredded
- ½ cup Parmesan Cheese, grated
- ¼ cup Chablis Wine
- ¼ cup half and half
- Preheat the oven to 400 degrees.
- Spray a 9x13 baking dish with Nonstick Cooking Spray. Use a knife to cut a large pocket in the side of each piece of fish. Place in 9x13 pan and set aside.
- To make the sausage and crab stuffing, mix all the stuffing ingredients in a large mixing bowl, stir until well combined.
- Place ½ cup stuffing in each piece of fish and flatten the fish slightly so it cooks more evenly
- Lightly spray the fish with non-stick cooking spray and sprinkle with Seafood Seasoning. Carefully add ¼ cup water around the fish, not poured over the fish.
- Place in oven and cook 20-25 minutes or when the stuffing reaches 140-150 degrees.
- While the fish is baking, make the sauce by combining all the sauce ingredients in a small sauce pan over medium heat, stirring often until the cheese is melted and the sauce is bubbling. Serve over the fish.

this is right up my alley!! first you buy an opossum...
i like wantas and for ease try the cedar plank on the grill method. just get some cedar shingles,soak em and put fish on top,toss on a smoky grill. try to get untreated shingles. squirt with lemon,rock salt and good red pepper. serve with white rice and as usual,ice cold vodka/white wine. use this as a finger food right from the grill with G/F. laugh and feed each other while making kissey faces. -
Soak the Salmon overnight in Maple Syrup.
Next day, fire up the grill.
Before slipping the Salmon onto the grill, sprinkle it with Garlic/Pepper spice.
Grill until the syrup caramelizes, then enjoy. -
for something really ridiculously easy:
mccormic lemon butter dill sauce, you can find this at any decent store, normally by the deli/seafood counter...
pour some right on top of the raw salmon, coat that with crushed ritz cracker crumbs, bake for 15 minutes or so at 350
serve with a side of the sauce to dip in, if you want it to look fancy, garnish it with lemon and parsley -
google salmon soy sauce and brown sugar and u will find a great recipe. I eat mostly chicken and fish, and this is by far my favorite way to cook salmon.

50/50 mix of honey and Teriaki Glaze. Then HIGH heat on a charcoal grill with Mesquite wood chips for a quick smoke.

If you want to ruin it by cooking it, I like seasoning my salmon and cooking it smothered in ginger butter... which you make by grating fresh ginger, and adding it to butter. -

I usually do that plus make a herb butter topping. regular salted whipped butter plus parsley+cilantro. Mix it together.
