My brother recently opened a BBQ place and it is taking off very well. He got a bad ass smoker and does a fine job with the meat. I have been assigned the task of coming up with a pulled pork chili. I make a mean chili but this has to be special. What are the secrets to OT's chili?

I like to make mine with rib meat. Season some ribs, cook'em in the oven for a couple hours and then let them meld with the chili for a few more until serving (I put them in still on the bone, and then let the meat fall off right before serving).

For the rest of it, I like to just throw in some onions, peppers (green, yellow, and red) and celery, maybe a couple different types of beans, and some diced tomatoes. Then I do some hot and sweet stuff, a few diced habeneros, crushed red pepper, a good portion of chili powder, and then a little cocoa powder (or Hershey's syrup) and brown sugar. -
Sounds very good, I've never tried the cocoa or brown sugar, I'll give it a go.

the chop off of the board goes in a pot on the side. don't know how big(or how long you want to work the chili pot)quarter an onion with the chop.flash fry with garlic cloves. right into the chili pot. on going chili pot. beans should be canned for a large customer base or cooked day before,simmered with chop meat. serve with chopped onions,file' gumbo.garnish with your thumb in it as you serve.

I say..this is a fuckin' BRING IT by any OT in the area. if you need a staging area in misourri, i got it. then i can shoot you. but i say. rolllll that OT chili!!

I like to use sirloin or deer meat

Rotel tomatoes, Mexene chili powder, minced garlic, white cooking onions, red and green peppers, fresh sweet corn, chili beans, kidney beans, black beans, whole chili peppers, and fresh ground black pepper. Add the corn, whole chili's and most of the powder the last 20 minutes of simmering.

Why not put some peas, carrots and a tampon in there while you are at it. -
Corn would be a no go, he does a burnswick stew that has corn. We do use a tampon while simmering but take it out just before serving, kinda similar to a couple of the waitress there.

Think it would be better with beef as opposed to pork, but it's goo
