Instead of a sarcastic comment about the lack of help you have received in the 17 minutes between your posts you could always find out for yourself whilst you wait for a reply.
Google "mac compatible poker sites". There are sites that list all the mac friendly poker rooms. Then, from the list, see which are US friendly (probably not many). If there are any you can then check them out yourself to see what rakeback/sign up deals are available.
Hopefully someone with knowledge of the subject will help you out but whilst you wait for that I'll start you off:

im almost sure that your out of luck, I believe that the only mac friendly sites are FT Absolute and stars, my best suggestion is to run leopard and use the boot camp feature to use windows XP, but do it soon before they stop selling it if they havent already, if you cant get xp in the store look on ebay. vista is way to big to run on boot camp, i dont care what they say.

I use fusion, works just fine to play many other sites. dont know about parallels 3 or the new 4, but i am assuming that they both will work just fine as well.

You'd have to ask someone with a new mac who is using bootcamp. Bootcamp is a PC simulator, but I don't know how good it is. I have Virtual PC on my mac and it is awful, so slow that it is only suited to open text documents. I do hear Bootcamp is entirely different. Capable of running Cake? Not sure.

I run Cake on my Macbook Pro. I bought VMWare Fusion and Windows, then run it through Windows. If you were going to multi-table on multiple sites, you would probably want to run them all through Windows instead of the Mac OS. If you were just playing on Tilt & Stars, you would want to run the Mac OS.

parallels 4.0 just came out for mac os x 10.5.5 etc and apparently its 50% faster which sounds sweet. Im running 3.0 and it already runs really quite smooth so i cant imagine how nice 4.0 would be. Plus if u have bit torrent its super easy to get it for free lol. Just make sure u have a windows disk sittin around somewhere. Idk why anyone wouldnt get a mac these days since u can just boot up or run parallels for windows anyway.

idk about vmware but with parallels u can put it into coherence mode and basically the windows apps run side by side w/ the mac apps. You dont have to do separate windows or anything. Also the windows apps u can put right on your dock, minimize, works with expose (which is great for multi tabling sometimes) etc etc. Parallels owns all imo

VMWare has a mode like that, but when the Cake window is covered it doesn't go to the front when its your turn to act.

yeah i tile tho so its not a big deal. Also none of my freaking windows seem to do that, esp on ftp even tho i have the box clicked for it. Im scared to cascade anyways cause of button overlaps i feel im gonna misclick

yeah i use vmware fusion 2 it works well on my macbook pro!
