If you're not getting paid off then you're playing them against the wrong players.
They are profitable against players who will stack off light, like with top pair or just overpairs.
For example you have 1000 chips and your villian has 1000 chips. Villian raises to 10 then shows you AA, you look at your cards and have 33. You know villian is never folding AA on any board and you're 8 to 1 to hit your set and getting 10 to 1 implied odds on your money. So long term it's a profitable play, especially if your disciplined to not put any more money in if you miss your set.
Also against players who aren't paying you off, this is a great opportunity to bluff them in some spots where you miss. Bluffing will make them account for a wider range and you will get paid off when you do hit.
