Serious tipping thread.
If you ever "politely explained what was customary" in any of my restaurants, you would be terminated on the spot. I have probably fired 5 people in the last 2 years for it. That is so condescending and ridiculous to me that I really am starting to get pissed off right now. Where do these people come from'

Serious tipping thread.
I think in all my years running restaurants there are maybe only 1 or two tables a month that don't tip on wine, no matter what the cost. I think one reason is that if you are going to order a bottle of wine for $1000, you obviously have a little money and are not as concerned about the tip money. Most times, big bottles are ordered by people who have no idea what they're drinking, they just pick the expensive wines. 5 businessmen in for lunch the other day - ordered appetizers and wine - bill was $38,000. It all depends on what is important to you. My buddy didn't have much money and his dog needed a double hip replacement for 20K. He hit keno on Bodog for 25K and got the operation in a second. Didn't think twice about it. I always think about that story from Benny Binion when he was talking about people paying 5-10K for bottles of wine. He said he would never pay that for a bottle of wine because he wasn't a big fan of wine. However, many times in his life he would have paid 5K for a good milkshake...

Sweetness is a ridiculous person...
I have been running restaurants for a while now. VERY few servers that I know make over 100K a year but they do exist. It 100% depends on the city. I don't care how good a server you are, if you are in a smaller town, you will never average $400 a night. I have run restaurants that averaged $50-$200 a person and it doesn't matter, it is VERY tough to make 100K and if you do, your living expenses are usually much higher because the cost of living is usually higher. Just my 2 cents

Job hunting tips
I interview people daily - some for $10.00 an hour jobs and some for 150K plus. It is amazing how poorly some people prepare for an interview and how well others prepare. Example - today I asked a guy why he left his last job - his answer - "I was always late...(so they fired me)" How do you think that one went' I think the biggest thing for me is to be prepared. I ask people "Do you know anything about this company'" If they say no, I just saw the sign and came in, that my alter my decision from someone that actually took the time to learn a few things about us. I took almost 2.5 hours off of mapquest's estimated time today
I left the car in an apartment complex where I lived in Cherry Hill. They were great about not letting cars sit too long and having them towed. I took a cab from the airport and I told him when he was driving - if it's not there when we get there just turn around and drive me back to the airport. Thought I would be in a coma when I got back but I was fine - cracked a bottle of wine and watched a movie...

I use mapquest when I'm at home. I like the fact that I can move the route on the map and it adjusts the time/directions. Good for making sure that they have picked the quickest route - also good for avoiding ghettos although there is now an app for that.

I was just watching American Pickers and the guy was saying how he had to make his country bar bigger after Urban Cowboy came out. What movie do you think had the biggest impact on the items featured in it. I went to an aviation college and I do remember the huge impact that Top Gun had on Ray Bans and Kawasaki Ninjas. I also remember reading how Dirty Harry had a huge increase on 44 Magnum sales but most people returned them because they couldn't handle the kick from them. I know the feeling. Drove from NYC to Philly one time and got one in New Jersey and one in PA 30 minutes later. Funny thing was they were both 78 in a 55. Jersey was $68 fine but PA was $134.

I think I averaged 85-90 mph. Doesn't help that Jax is the largest city in the US - I checked today and after I passed the "Jacksonville City Limit" sign, it was 34 more miles to my house.

I know -big deal - but it was actually a pretty productive day for me. I moved from Philly to Jacksonville last month but left a car in Philly. Yesterday I went online and found a ticket from Jax to Philly at 6am today. I flew up, got there at noon, finished a couple things for work and then drove my car back down here. Mapquest said 14 hours and it took about 11.5. I always think about that Louis CK bit when he is talking about the settler days here when people would have kids or someone would get old and die while moving to the other side of the country.

Most embarrasing things that you've done or that has happened to you
College in Florida - day of finals - didn't realize it at that point but apparently I had been bitten by a spider in the morning. As I'm taking the test I see the marks on my hand and it starts to get bigger and bigger. Then I start to feel sick.
